Natural Wellness Solutions: Recipe :)

Lemons and Limes are good for us they are full of vitamin C and here are a couple of fabulous ways to get them into your diet, thanks to Natural Wellness Solutions.

As of  this posting, Serenity’s Gift Cove personnel haven’t tried either one, but the summer on its way and we are thinking that both would do well at bbq’s. :) Enjoy

 

Lemon/Lime Recipes

 
 

 
10 Minute Lime Coconut Cooler
This creamy refreshing beverage is wonderful with any of your favorite Asian recipes.
1 cup canned coconut milk (not fat)
1/4 cup lime juice
1/3 cup mint leaves
4 tbsp. honey
2 cups crushed ice
 
Place all ingredients, except the ice in a blender and run on medium speed until the honey dissolves, about 1 minute. Add ice and blend on medium speed until it has the consistency of shaved ice. Pour into two chilled glasses and serve garnished with mint.
 

Quick Lemon Sauce
A versatile sauce that is quick and easy to prepare and complements many types of fruits!
3 tbsp. creamy honey
2 tsp. lemon juice
1 tsp. lemon zest
Mix all ingredients in a small bowl, then spoon over fresh fruit or low-fat yogurt.
Use organic products when possible.

Recipe: Scotch Shortbread Cookies

Ingredients:

 Heat Oven to 350 and have all utensils/ingredients at the ready. ☺

You will Need:

3/4 cup butter or margarine, softened: 

 1/4 cup sugar:

2 cups all-purpose flour:

Method:

Cream butter and sugar and then work in the flour. If dough is too crumbly, mix in 1-2 tbsp of butter.

Roll dough 1/2 to 1/4 inch thick on lightly floured cloth-covered board.

Cut into small shapes. Place 1/2 inch apart on ungreased baking sheet. Bake about 20 mins or until set. Immediately remove from baking sheet.

Makes about 2 dozen cookies

Ahhh… Spinach… :) Popeye knew it all those years ago… it’s good for you… :)

Spinach is an excellent plant based source of iron, virtually fat free and only 41 calories in one cup of cooked spinach. Spinach also contains at least 13 flavonoid phytonutrients that also function as powerful antioxidants. Spinach is available throughout the year, but its flavor is at its peak during the cold months. Spinach stems are great for adding more fiber to our diet. The healthiest way to prepare spinach is by quick boiling for 1 minute. Avoid overcooking, steaming, or sauteeing. Cooking with oil is not recommended. Spinach cooked al dente is tender because it is cooked just long enough to soften its cellulose and hemicellulose fibers, thereby making it easier to digest and allow nutrients to become more readily available for absorption.”
 
 
Fettuccini with Spinach Pesto
 
1 lb. brown rice fettuccini or kudzu and sweet potato pasta
1 lb. pkg. frozen spinach, thawed and squeezed dry
2/3 cup crumbled feta cheese (goat, if available)
2/3 cup pine nuts
1/2 cup packed chopped fresh basil
1/3 cup olive oil
1/3 cup boiling water
1/2 tsp sea salt
1 clove garlic, crushed
1/2 tsp. anise seeds
a little ground black pepper
 
Prepare the pasta according to the package directions. Drain and return to the pot.
Meanwhile, combine the spinach, cheese, 1/3 cup of the nuts, the basil, oil, water, salt, garlic, anise seeds and pepper in a food processor. Process until smooth, scraping the bowl as needed. Sauce will be thick. Pour over the pasta and toss gently to coat.
Divide among 6 plates and top each portion with some of the remaining 1/3 pine nuts.
