2 Eggs (Beaten)

1 cup white sugar (I used Honey)

3 tbsp Veg oil (or light tasting olive oil)

1 cup of milk

3 cups of all-purpose flour

1 tsp salt

4 tsp of baking powder

1 cup fresh blueberries (I used Frozen)

1/2 cup chopped walnuts or use more berries and less or no walnuts (I did not put nuts in mine)


Heat oven to 350 degrees:

Mix eggs and sugar (honey) add milk and oil

sift flour, salt and baking powder, combine with egg mixture and then carefully fold in blueberries and nuts.

Pour into a 5×12 loaf tin lined with parchment paper and bake 50 to 60 minutes.

It is noted you may also use two standard loaf tins and bake for 45 minutes.

  1. I decided to try this recipe as an alternative to always making banana bread. Blueberries (and all berries) are powerful antioxigents…. I did not use the nuts, but I am sure they add to this loaf. It’s good for a change, but it’s tough to beat the Banana loaf… ☺
